Apricot Cocobars

 

Have I ever mentioned my hubby had a crazy sweet tooth ? I think so.

He has a very tiring job, which keeps him busy for 6 days a week and afoot all day long. His only luxury is the evenings, when he comes home at night, stretches his legs and eats his dessert.

I always say that I don’t feel like making him any dessert with refined sugar, rice, flour and starch since now I know how harmful they all are. I feels like I am poisoning him.

So, yesterday I made him a completely natural dessert with real and unprocessed food and he gobbled it all up happily. He kept asking what was inside. I simply giggled and replied “Enjoy”.

No habit is unchangeable.

Ingredients:
3/4 cup shredded coconut
6 large sundried apricots
1 tblspn unsalted soft cheese
1 pinch lemon /orange zest
A handful of almonds (optional but recommended)
Instructions:
Pulse coconuts, apricots, cheese and lemon zest in your food processor. Add almonds when it becomes a sticky mixture. Stir with a spoon and press firmly on a square mold. Keep in the fridge at least for 3 hours. Slice, enjoy!
