This is the best cake I’ve ever made. Soft, puffy and delicious. This is why we named it cloud cake. I had to hide all the cakes I can find to be able to take a picture. But half was already gone. Flour and refined sugar free as always. I haven’t even added any kind of oil this time as well, because all the healthy fats inside the other ingredients were enough.
1/2 date puree or any other natural sweetener of choice
2 tblspns heaping cream cheese
2 tblspns almond meal
2 tblspns dessicated coconut
1/2 tspn cinnamon
1/4 tspn baking soda
1/2 tspn lemon juice
Mix the eggs, add the other ingredients and keep mixing, until a very fluid batter forms. Split in your muffin molds, bake until golden in a pre-heated 150 C oven.
Tip: The batter should be more fluid than regular cake batter, but if it is too fluid I suggest you add 1 tblspn coconut.
