So last night I have decided to make some coconut milk – because Bade likes them with her cookies and I inside my coffee.
Here’s the universal recipe:
1 cup shredded/desiccated unsweetened coconut
3 cups of warm water
1 tablespoon honey/ molasses (optional)
Place the coconuts in a deep bowl, add the water. Mix with a hand blender until the mixture is foamy and creamy. Strain, preferably keep in a glass bottle and in your fridge. Consume within a week! Very easy and smells so damn good! This recipe makes 1/2 lt coconut milk. Its a very good and delicious option for those with casein intolerance.
