Flourless Cinnamon Cake


 

 

My best friend makes this amazing cinnamon carrot cake. Its the traditional recipe of course, with flour and sugar. I remember asking her its recipe and trying… and not being able to capture that same taste.

Would you believe me if I told you I finally captured that special sense it leaves in your mouth with this healthy, flour, sugar and carrot free cake ? It is so very easy to make… and so practical…

I think this was Bade’s favourite so far, also a great way to consume some cinnamon, a tasty snack that does not make your blood sugar jump. I keep  baking this cake for breakfasts, it substitutes for bread and also makes it possible for Bade to consume fruit, eggs and probably one of the world’s healthiest foods, coconut, altogether.

Our after-meal blood sugar tests prove its such an ideal choice.

 
Ingredients:
– 1 large banana
– 2 eggs
– 2 tablespoons of olive oil
– 2 tablespoons of cinnamon 
– 1 package (50 g) shredded coconut
– 1 teaspoon baking soda
Instructions :
Mix the eggs with olive oil, add banana, coconut, cinnamon, and baking soda and blend them until smooth and a slightly thick batter forms. Bake in your greased mold of choice. Muffin molds are ok. I have used a heatproof soup mug. 
Cooking Time:
20 minutes in 180C pre-heated oven
5 minutes in medium heat microwave
* I suggest you use 1 tablespoon of molasses if you desire a sweeter taste
