Flourless Peanut Cake

Do you like peanut butter ? How about this cake which tastes exactly like it ? The color, the smell, the taste…this is something else! And its making is as simple as its ingredients. My dearest Bade cracked open the peanuts herself. Small fingers are especially good at cracking peanuts open:) She loves them, and its so funny to watch her steal some while at it. As a result we made one hell of a good cake. Of course its flour, refined sugar and additive free and very healthy! A candidate to be very popular for school lunch boxes! This recipe is anonymous due to its popularity among low carbers.

Ingredients:
– 1 egg
– 1 banana (not ripe)
– 1 cup unsalted peanuts
– 1 tblspn molasses
– 1 teaspoon baking soda
– 1 tblspn butter/olive oil
Instructions:
Blend all ingredients until smooth with your food processor. Bake for 35 minutes in a pre-heated 200C oven inside a greased/parchment paper covered small mold of preference. I have used a soufflé mold. I think the batter will be enough for 4 small muffin molds.
