Grainfree Walnut Brownies

Serves: 4 servings


For the cake

100 gr walnuts

3 medium eggs

25 gr cacao

12 dates (12 x 8 gr )

2 tspns lemon juice

1/2 tspn bicarb soda

2 tblpsn olive oil or coconut oil

For the sauce

½ cup (100 ml) homemade walnut milk (or any other nut milk)

1 heaping tblspn cacao

1 tblspn (20 gr) honey or date syrup


1-Set your oven to 160C. Mix eggs until foamy.

2-Wash the dates, pit and puree until smooth.

3-Grind walnuts in your food processor or coffee grinder.

4-Mix walnuts, eggs, date puree, cacao,  lemon juice, olive oil and bicarb soda until smooth.

4-Pour the batter in a 20X9cm silicone loaf, bake for 30 mins. Remove, cool.

5-Warm up the nut milk, add cacao and honey, mix until homogeneous.

6-Pour the hot sauce on top of the cake. Wait for it to drain, slice and serve.
