Hazelnut Chocolate Fudge Cake



Here is a recipe my husband likes very much. Of course there are no additives, flour or refines sugar inside. I have used dates to sweeten it up but you can easily alter it with your favourite dried fruit. Actually I was going to give the recipe for a birthday cake but my little monster gave me the flu.

I have a sore throat, a runny nose and I am not feeling well at all. I keep sneezing. Only lying on a couch looks tempting to me! So, I think I should lie down a little…See you soon!
3/4 cup raw hazelnut kernels (I used hazelnut flour)
2 tblspns homemade double cream
4 Iran dates or sundried apricots
2 tblspns cocoa
For the topping

Pulse all ingredients until they become a smooth puree, pour and press on a rectangular mold. Keep in the fridge for at least 4 hours. Slice, top with more cocoa and serve. This recipe makes 6 small squares.

  • How do you make the homemade double cream?

    • just boil the raw milk and let it cool, then keep in the fridge overnight. in the morning remove the clotted part on top and there you have it.
