Hazelnut Flour Butter Cookies

 


I have spent last night with a little monster, who could not breathe due to a stuffy nose, who refused nasal spray and remedies, then got a fever and got very grumpy due to lack of sleep. He yelled at his dad: “This man annoys me!” and made angry noises at him every time the poor man moved. And then she opened her eyes at 8am as if nothing happened and quite energetically and said “Mom, my sleep is over.”Of course I could not even open my eyes. Right now she is watching cartoons with healthy, red cheeks and her nose is not even stuffed. Kids are weird creatures. I could not help but bake these cookies even though I feel very tired because they are so practical. And my hazelnuts were ready from yesterday anyway. All that remains is to breathe in the wonderful smell from the oven. I have to admit they are very, very delicious.


Ingredients:
1 cup raw hazelnut flour (powdered in a food processor or coffee grinder)
1 tspn lemon juice
1/4 tspn baking soda
4 tblpspns melted butter
1 tblspn molasses / 2 pureed Iran dates
Instructions:
Blend and knead all ingredients and you will end up with a soft cookie dough. Roll in your hand and press on top to give shape. Bake for 10 minutes in a pre-heated 160C oven and on a parchment paper covered baking sheet. Take out from the oven and cool. Enjoy. This recipe makes 20 small cookies.
