I was sitting in front of the fan after a long session of ironing, trying to cool my sweaty self, when I noticed the hazelnut sized bump on the right side of my neck.

“You have Hashimoto’s” said the doctor the following day. After he checked the bump with ultrasound.

Two days later, we received the lab results.

“We cannot call it Hashimoto. It does not look auto immune.”he said. Turns out I have Hashimoto looking Hypothyroiditis.

And it seems, it was the reason of all my troubles.

Those who follow me close will know about my panic attack crisis a few months back. It turns out I was not depressed and I definitely did not have any psychological problems.

The reason of my fatigue and exhaustion was not the heat I kept complaining about. And it wasn’t even that hot, I simply was not able to tolerate it.

The fact that I kept forgetting everything & feeling stupid (and my husband having to run around to fetch all for me) had a reason. It was called brain fog. One of the signs of this disease.

The reason of my gaining weight despite a healthy diet, and gaining all back swiftly was this disease.

Those who know me close can tell you what an aggressive person I have become these past couple of years. The reason is now obvious.

Perhaps you may have an idea on how much I have suffered if I tell you my TSH level is 45.

I have been going through hell these few years. I kept tearing myself apart for my daughter, for her to be healthy and during all this time I was very ill and had no idea about it.

I have now gone completely gluten free with my doctor’s advice. I even went beyond that and went completely grain-free..

Goodbye einkorn flour, einkorn pasta, ancient Tosya rice..goodbye spelt bulgur!

I have also decided to stay away from caffeine because of heart palpitation. Goodbye Turkish coffee! Goodbye homemade chocolate!

It’s only been a few days but I have felt a serious improvement. Let’s see what will happen next.

And because I thought I had Hashimoto’s for two days I have been into AIP diet very much indeed. Oh my God. You think going gluten free is too restrictive ? Try going egg-free, dairy-free, nut-free, nightshade-free. I will definitely have more recipes for you from now on. Voila.

AIP Mayonnaise

Prep Time: 10 min

Serves: 2 servings

Adapted from The Primordial Table’s AIP Mayonnaise

 

Ingredients:

½ ripe avocado

1 tbspn cold pressed olive oil

1 tspn lemon juice

¼ tspn rock salt

1 small peeled garlic clove – optional

Instructions:

1-Blend all until smooth, serve. Feel free to serve it with zucchini noodles or oven fried sweet potatoes.
